Trộn 250ml kem sữa tươi với 1 muỗng canh bột cacao trong một nồi nhỏ. Đặt nồi lên bếp đun sôi với lửa nhỏ, liên tục khuấy đều để kem sữa tươi không bị vón cục. Đun đến khi bột cacao tan hết hoàn toàn.
Cho chocolate vào nồi, vừa đun vừa khuấy đến khi chocolate tan thì bạn tắt bếp, để nguội.
Cho 120ml sữa tươi, 40g đường và 1/4 muỗng cà phê muối vào một nồi khác, đun và khuấy đều cho đường và muối tan.
Đánh tan lòng đỏ trứng gà rồi cho hỗn hợp sữa vừa đun vào, khuấy đều lên.
Cho hỗn hợp trứng và sữa vào nồi sạch, đun và khuấy đều cho hỗn hợp đặc lại thì nhẹ tay đổ hỗn hợp vào nồi chocolate bạn đầu, khuấy đều lên.
Lọc lại qua rây để hỗn hợp không bị lợn cợn. Thêm 1 muỗng cà phê vani vào, đảo đều.
Cho hỗn hợp vào ngăn đá tủ lạnh. Khoảng 1-2 tiếng đồng hồ lấy ra trộn đều, lặp lại khoảng 3-4 lần là được.
